Julia's Southwest Salad Toss
(quick & easy, keeps several days in frig.)
* 2 cans black beans, drained & rinsed
* 1 can corn, drained & rinsed
* 3 fresh Roma tomatoes, chopped into small chunks (or a can of chopped tomatoes, drained)
* 1/2 small fresh onion, chopped
* 1 clove fresh garlic, finely chopped or through garlic press
* 1/4 cup fresh cilantro leaves -- and/or -- 1 tbsp. dried oregano
* 1/3 cup chunky 'medium' salsa (for fresh taste, we like our homemade salsa, or from a jar of La Victoria Thick & Chunky)
* juice of fresh lime wedge
* pinch of sea salt
Toss it all together and serve cold with avocado slices & warm corn
tortillas ~ enjoy!
Brown Rice Salad
Use recipe (see above) for Julia's New Mexico Salad Toss -
but instead:
- omit the corn
- omit the salsa
* add two cups steamed short grain brown rice, chilled
* add 1 can black olives (thickly sliced)
* add 1 cup chopped fresh green bell pepper
* add 1/8 to 1/4 cup olive oil (extra virgin)
Lightly toss all ingredients together. Serve cold or warm.

(for a tasty boost of calcium, iron, and a little protein, too)
* Plain Yogurt - whole milk (we like Nancy's or Mountain High)
* Unsweetened Pears (canned - in pear juice or water)
* Raw Sunflower Seeds (without shells)
* Blackstrap Molasses (unsulphured)
In a cereal-size bowl, pile in about 2 cups of the yogurt, top with a few pear halves and add a small handful of the raw sunflower seeds, then drizzle blackstrap molasses over the top ~ relax & nibble!
